PINEAPPLE BANANA CAKE WITH COCONUT FROSTING
This cake is very moist and the frosting makes is even more so. Makes a great dessert for family or guests. I love it with my morning coffee.
Coconut Frosting
3/4 cup sugar
1 (12 ounce) can evaporated milk
1 stick butter or margarine
3 1/2 to 4 cups coconut
1 cup nuts of your choice (I used walnut pieces)
Combine all ingredients but the nuts and bring to boil on top of the stove. Stir to keep from burning. Boil about five minutes until thickens. Remove from heat and fold in nuts. Let stand about 10 to 12 minutes before putting on cake.
Enjoy!
Note: This cake is good with cream cheese frosting, too.

Ingredients:
Milk (just under one cup)
1 Tablespoon white vinegar or lemon juice
Directions:
Place a Tablespoon of white vinegar or lemon juice in a liquid measuring cup. Add enough milk to bring the liquid up to the one-cup line. Let stand for five minute. Then, use as much as your recipe calls for.

Pallet Chicken Coop
Coop for the night and weather shelter is on the right, two story with a ramp. The planter box on top was a free shipping crate from a stone company where we got the free pallets. Left 2/3 is a running grassy area for my Rhode Island Reds to run around.

Use for Vinegar
TIP: Soak old paint brushes in HOT vinegar for 30 minutes and then wash. The old paint will come out and they will be as good as new!
DIY Dishwasher tablets
1 C Borax
1 C Arm & Hammer Washing Soda
1/2 C Epsom salt
3/4 C lemon juice
1. Mix dry ingredients together in a medium sized bowl. Add the lemon juice and mix completely. You want the mixture to be wet enough to mold without falling apart. Add additional lemon juice if needed.
2. These dry very quickly so working quickly and one at a time, portion out a tablet around 2 tablespoons. I used a small cookie scoop. With wet hands, form the tablet into whatever shape needed to fit the soap dispenser in your dishwasher. Place on a sheet of wax paper and let dry for a few hours before putting in a storage container. If a tablet happens not to fit into the dispenser, just toss it in the bottom of your dishwasher.
